The Making of Goat Cheese

My neighbor has some very cute little goats... so last year I asked her for some milk to make cheese and she gave me some. My first attempt and it was good.
So I was surprised when she called me this week and asked me again if I wanted her surplus of Goat's Milk,,, I jumped at the chance. I love Goat cheese. Anyway.. I got it home and went right to work. It may seem like it's a lot of work and difficult,, but believe me. I think it's easier than baking a pie.(I can't make a crust, but I can make cheese)

Here are my steps:
Bring the milk to a temp of 190 degrees to 200, add a 1/2 cup of vinegar right after you shut the heat off, stir only till the vinegar is completely in the pot. Let sit undisturbed till the temp gets to 100 degrees. Pour in a cheesecloth lined colander ( that's what cheesecloth is for, making cheese!!) Wrap up in the cloth and hang for the texture you want. The longer it hangs, the more hard of a cheese you get.

Unwrap and add you flavoring.. I love cracked fresh pepper and some Mediterranean sea salts with other spices.. it's up toyou..... enjoy.

Guess what the weather is like????


You guessed it!! Rain, Rain, and more rain. If anyone says the word drought in the Northeast I think I'll faint. We have enough water to last a lifetime. Oh, and that global warming thing.. it isn't happening in Maine. So when the rest of the world is scorching and in a massive heatwave.. just come to Maine...you'll be kept cool and wet all year round... Maine the way life should be??

Home from a Wet Vacation


Well, the weather didnt' cooperate, but that was okay. My husband and I had a wonderful time in Boothbay, Maine and enjoyed our time alone very much.

We stayed in this small cottage right on the ocean, and had a lovely fire in the fireplace every night, due to the weather.

We did a lot of getting out. We went to the Maine Aquarium and the Maine Coastal Botanical Gardens. We also went to a play at the Boothbay Opera House and had dinner out many times.

My sister and her husband came up so we went for seafood and an ice cream at this great place in the center of Boothbay Harbor.
Tennis and Hiking rounded out our time on the coast of Maine and yesterday we went to a wonderful old fashioned 4th of July party on the Town Green in Boothbay. What a wonderful wrap up to a perfect week.

Just remember, if you come to Maine in the summer.. don't always count on the weather cooperating!!
